Have a box of cake mix lying around but don’t want to make a basic cake or cupcake? Try these cookie bars! These cookie bars make for an easy treat to make for any occasion. Appropriately named Can’t Leave Alone Bars, the name says it all!
- 1 package white or yellow cake mix
- 2 large eggs
- 1/3 cup canola/vegetable oil
- 1 can (14 oz) sweetened condensed milk
I highly suggest using Eagle brand condensed milk. Don’t use a generic brand.
- 1 cup semisweet chocolate chips
- 1/4 cup butter, cubed (I used margarine that I had in the fridge)
Preheat oven to 350°. In a large bowl, combine the cake mix, eggs, and oil. Press two-thirds of the mixture into a greased 13×9-in. baking pan. Set the remaining cake mixture aside.
In a microwave-safe bowl, combine the milk, chocolate chips, and butter. Microwave uncovered in 15-second intervals until chips and butter are melted; stir until smooth. Pour over crust.
Drop teaspoonfuls of the remaining cake mixture over *top.
*pro-tip: spray your hands with cooking spray so the batter doesn’t stick to your hands. A cool trick I learned from the TV show “Nailed It!”
Bake until lightly browned, 20-25 minutes. Cool before cutting.
